Magento 2 How to show out of Options for Configurable Products?

Hello,

I need to show my Customers all Option like Color for the Items.

But wehn a Color is out of Stock is isnt showing, how to change this?

Also how to show the Price if all Items are out of stock, for me it is just showing 0,00.

And a 3 Question: How to add a 3Tab between Reviews and Details, I need to show some stats somewehere, maybe there is allready a tutorial?
