Magento 2.x PHP specifications

In order to import a Magento installation from another server, I must deploy a VMware virtual machine.

Customer now uses 2.2.5, however he intends to upgrade to 2.3.

I feel at ease using both Debian and CentOS, and I'm going to utilise CentOS 7 for the time being.

However, the official documentation is ambiguous regarding how to start a PHP module. FPM? CGI?

Exists a preferred approach?
