[SOLVED-somewhat] Magento Email settings - when do they actually change?

We are moving to Office365 and need to modify the Mail Sending Settings in our v1.4.0.1 installation of Magento. Please do not criticize me for the old version as there are reasons behind not upgrading.

 

Anyway. I make the change to the Host setting, flush all caches, yet the order email still goes through my old SMTP server.

How long does it take for this change to happen and are/could there be any other place that it could be picking up our old SMTP server host setting?

Boy, 21 views and...NOTHING. Thanks for the help Magento Community. Now I see why people are leaving Magento in droves.

 

Anyway...System used postfix vs. sendmail, even changing Magento email parameters didn't matter, SMTP was still being routed through postfix relayhost.
