Edit default e-mail text and missing logo

Where do I find the text of the various e-mails that are sent to customers? I need to edit the text that appears on them.

Also - my logo is not showing up on e-mails. Apparently I haven't put the logo in the right directory (ies). Can anyone help?

/skin/frontend/{package}/{my-theme-name}/images/logo_email.gif
You can change the logo for the email from above path.

And to change the email text:
Go to System > Transactional Emails
Select the email you want to edit and make the changes you want to have and save the template. That's it.
