In admin create order ->seach ->add prodcts section
I have added new custom product attribute as addColum field
Mage_Adminhtml_Block_Sales_Order_Create_Search_Grid
Its working fine
all products are simple prodcuts only.
I have been change price based on attribue select value.

Which observer i can you for select item
