Impact of assigning attributes to child rather than parent configurable product?

A majority of our products are configurable. Currently, we're assigning most of our attributes to the parent product. However, there are some variations in the attributes of the child simple products. For example, product in size one may be delivered in glass where the other product options are plastic. Or, child product one might contain sugar  where child product two may have something more artificial.

 

It seems obvious that the attributes should be assigned at the child product level, but how does that impact layered navigation and product attributes displaying within product details of the product view?
