How do I upgrade to Magento 1.9 - lost guest contact info

We recently upgraded from 1.7 CE to 1.9 CE and now the email and phone number are no longer stored in the database.

We also lost the Guest Name in the 'Last 5 Orders' listing in admin.

Anyone have a resolution to this issue?   The phone number is very important to be stored for priority shipments and international customers as they are required by the UPS & FedEx softwares.
