Product specific shipping group/in-store pickup

Most of our products offer shipping but a select few are only available for in-store pickup. I believe this can be assigned via shipping groups but I cannot figure out where this setting is located. What is the easiest way to go about this without an extension. Thank you,

Unfortunately, you won't be able to achieve this in Magento without customization.

If you do consider using an extension, Store Locator, Curbside & In-Store Pickup can come in handy. With the help of rules, you can create a rule that disables order pickup when there are improper products.
