I created 3 items (see picture), first item on the left, sizes shown above the color; 2nd and 3rd item  have color on top and size below; 3rd item to the right showing M-S-L instead of S-M-L.

All these items were created with the same attributes; How can I make them display all equal?

Sorry but can't see picture. It may be a problem of the order in attribute set or values in particular attribute, but this is just a guess, a picture would tell more...
