Changing the Value of store_email

I am updating email templates in Magento 2. Currently, it appears that the value of store_email defaults to the Customer Support email. I would like to change store_email to look at the Custom2 email. I've noodled with this all afternoon... how can this be done?

You can change the email sender from admin :

Stores > Configuration > Sales > Sales Emails > Sender email

Change the value from dropdown to Custom2 email.
