Override Layered Navigation Filter(s) on Category Page

Not sure if I'm asking the correct question. I wanted to know if/where its possible to override the filter for the layered navigation on a category page. For example, in this image, if I wanted to filter out Hockey where would I do that? I presume I could use a plugin to handle the afterLoad event or something similar, just not sure what I need to override. Does anyone have a suggestion on how to accomplish this?

You can use Magento default method to show which file you need to override and also find out block which is used to call the layered navigation filter and override or create a plugin.
