I'm researching PIM solutions that are open source to handle some of the extra work load of gathering images and attributes before publishing to Magento. Has anyone worked with Pimcore?
No, but in case you don't know Magento go-to PIM solution is Akeneo.
Yes, one of our consulting partners were the first to use it with Magento, but unless you have a need to heavily automate product management then it is complex. The connectors and the way it works mean that you need to have very high growth requirements similar to companies like Amazon.
Adding a PIM/MDM is something enterprise companies do to allow employees to handle more products with the same resource, however the cost is the time to implement to be able to see those benefits. Can point you to this, desktop.commerce.studio, which is based on Magento and Pimcore onboarding and designed to provide the same as Walmarts solutions for under 1hr supplier onboarding (Mulesoft), almost all stores would never see a return on investment if they developed it.
This is regardless of the PIM/MDM that you use, so unless you generate over mid $100,000s revenue per employee per year there's really no point as you would also need to completely adjust the way you work from a business perspective, and companies just will not spend the time to explain to you how to adjust your business model.
Basically it's overkill for 99%+ of Magento stores.

Sorry, only just seen your post from last year but looks like you are still interested in using Pimcore. I've been doing some bit and pieces with it as a CMS for a while now and have also looked at some integration stuff with Magento so do know a bit about it.

Please go with the Akeneo PIM. It is currently the best open source PIM software available right now. It is easy to use, customizable and can handle the bulk amount of products.
Webkul has developed Magento 2 Akeneo Connector module for Akeneo which allows you manage content and import as well export products, categories, attributes, attribute groups, and much more between Magento and Akeneo.
