What is the best data and research showcasing success of someone moving from Community to Enterprise?
For instance, at what point as far as orders per month, total skus in the database, yearly revenue, multistore needs, or any other needs is there strong data supporting a move from Community to Enterprise?

The major difference from my point of view is not the amount of orders, skus, etc. But if you or your client will need the features, that comes with the Enterprise edition.
Some of the Enterprise features are:
- Full page cache
- Strong ang fast support from the Magento team
- Customers area - Segmentation and promotions.
- Extended shipping and payment options vs. the community edition.
Also note if you upgrade from the community edition to Enterprise, your files will be branded with a Enterprise edition in the header, which will give you a disanvantage if a downgrade should be made a later time.

The beauty of EE is a lot of things are already included out of the box, whereas with CE, you often need to add third party modules to achieve similar features.

I don't see many businesses outgrowing Community Edition, or there being a moment where you say "I've got 100,000 skus, 50,000 orders a month.... I have to move to enterprise edition".
You have likely implemented every required feature from EE with custom or 3rd party modules and created process to work with CE. It's never necessary to move to EE.
It sounds like your looking for a reason to upgrade to EE, but haven't found one yourself. If the license fee is insignificant and you have a need for EE, than certainly upgrade.
