Manually create 'Sort By'

For example we sell tray units, As standard a 'single column tray unit' category is sorted via 'Position' however the amount of trays are all out of order - I want to be able to reposition the ordering so it is structure 5 tray unit, 6 tray unit, 7 tray unit.

Is there a way I can do this?

Sort by "Position" is powered by the position column in admin, e.g. the right hand column of http://docs.magento.com/m1/ce/user_guide/Resources/Images/category-products.png. By default magento sorts ascending so you would typically put a 0 in the product that you want to have at the top of the page and then put ever increasing numbers for everything else.
