How to overrideCore Rest API in Magento 2

Hi,

we try to override V1/categories Rest API but every time we fail. If any one have idea Please let me know.

Maybe using a plugin instead a preference? http://devdocs.magento.com/guides/v2.2/extension-dev-guide/plugins.html
