cache building up and causing 500 internal server errors

Hi,

 

I am running Magento 1.9.1.0 and I recently installed the latest security patches and now the Magento Cache keeps building up and slowing the site down causing 500 Internal Server Errors and stopping people from adding items to the basket. Clearing the cache through SSH solves the issue for a while until the cache builds up again.

 

Any advice would be greatly appreciated.
