why catalog_product_flat table in magento 1.9CE has numbering 1,2,3

HI,

Can someone please explain why catalog_product_flat table in magento 1.9 CE has numbering 1,2,3 and so on.At what instance this tables are created and among this which one is the default one. Secondly if i need to update some column value in the table using sql query from backend , which table needs to be updated, if we have catalog_product_flat_1,catalog_product_flat_2,
