My developer is building a new site and the last 2 nite the magento version has updated automatically. Can anyone tell me how this happens and how to turn it off.
Magento doesn't update itself automatically, it doesn't even have an option to do so. It's probably happened because somebody thought that it's good idea to keep stuff updated when checking Magento Connect Manager. It's not.
