How to handle interchangeable products?

We are in planning stages for a Magento2 implementation.  All of our products are one of a kind with individuals SKU's, but we have a few products that we make multiples of (but are very slightly unique).  These still have individual SKU's in our inventory, but I would like them to appear as one product on Magento. These are different from bundled products in that only one of them will be available at a time.  Is there a way to do this?

May be the Configurable Products fit in your requirements?

There are no configurable options.

The products are, for example,  diamond rings.  Each is unique, but we would want to list them all as "1.5 carat diamond wedding band" with the same grade of diamonds.  Obviously we cannot track our inventory as if they are all the same, but they would have the same grade of diamonds and identical metal fittings.

It looks like Bundled Products might be able to meet our requirements.
