First Question, I hope it is not too convoluted. Because I have many questions and don't want to annoy anyone at the offset .
I have some product which have multiple characteristics and I have been laboriously entering categories for them, it seem to me that there may be a much easier way to do this.
As follows, but then the same for brand 2 and brand 3.
Any brillant suggestions?

Maybe you could try to check the official user guide.
There's chapter about Product attributes: https://docs.magento.com/m2/ce/user_guide/catalog/product-attributes.html
You can use attributes as filters on categories. In that way you're cateogry tree could be smaller.

From that I managed to work it out.
It took me a lot longer to undo all the categories than it did to do it the correct way.
I don't suppose you know of a link that explains all the other parameters.
Storefront Properties.
Advanced Attribute Properties.
Etc.
Some are sort of obvious but others are rather confusing for the complete novice that I am.
Anyway I can't thank you enough for pointing me in the right direction.
