Have referred multiple hosting reviews & Magento dev docs, but not able to finalize the configuration & hosting.

Other than performance, i think following are necessary (mostly everyone includes that)
- Auto backups
- Easy Backup restore
- Good technical support

If technical support is important, you will want to avoid going directly with Amazon AWS as they are an unmanaged provider.
IMHO I also wouldn't recommend any EIG owned hosting providers like HostGator if you are looking for good performance and technical support, especially when they are not specialized in Magento and are merely using "magento hosting" as a marketing talk.

Here, I want to add a couple of more features that are essential for the Magento store. For example, scaling the size of the server, CDN, and security. I've been using a managed Magento hosting platform and I'm having a great experience.
And, yes I agree with your point, a store having products around 2000 requires a hosting plan of 4GB.

Sorry for the slow reply and please ignore if you have already sorted your hosting however this response may help others with the same question.
Personally I would stay away from Siteground and Hostgator as both have had several bad reviews of bad hosting implementations of Magento in the past.
Amazon is great as-is Google Cloud if you don't mind setting up your own infrastructure, you can achieve great results on here but at the cost of your time and a little more on your monthly costs if you make mistakes / go too big.
Nexcess I've personally only ever seen good things from, they keep uptodate with the latest technologies and are really pastionate about what they do. Their support is second to none.

@Stuart M Thanks for posting. Nexcess appears to be great. But, there is a huge jump in their plan. SIP300 shared for 1000 daily visitors and then its SIP400 dedicated for 5000 daily visitors.
