I'm trying to figure what hardware would be suitable for a new Magento 2 EE B2B store with the following characteristics:

SKUs: 100K

Visitors per day: 500

Transactions: 50

10 K products is the very amount of products so you need a good system.

MageMojo nowadays provide a good system

like 

autoscaling system when the customer is high on site

Min requirement

8Gb something ram, hosting depends on media files.

If any server provide load balancing then good

if you have b2b sales with only 50 trasactions per day

you need to check your database size, and add at least 50% memory on top.
