In the api call V1/products i get also out of stock products, even though I've set in Stores->configuration->catalog->inventory "Display out of stock products" to No.
there's a way to get rid of this annoing missing feature?

of course, I find out also this attribute "quantity_and_stock_status" but it's not associated with all products but only few of them

Can you please create new product from admin and make that product to out of stock, is that showing for you?
No way, I've just tryied, but no rows on attribute added
I've the same issue on 2.3 commerce edition.
If Display Out of Stock Products is set to no, via api rest you can't get the product.
Absurd...
