500 Internal server error randomly after upgrade to 2.4.1

I have been having a really weird issue. After upgrading to Magento 2.4.1, I have been getting 500 internal server error randomly on some categories. It would try to load for about 10 seconds and then error. I would need to go to cache management and refresh the cache for "block_html". Then everything would work again. Then slowly after a few hours, I would slowly get errors on different categories. The are never the same and are so random. Is anyone else having similar issues?

I get them in category pages. Those specific categories will not work until I refresh block_html. My temporary solution is to disable cache for block_html.

I'm getting the same error on Magento Commerce 2.4.0 p1
