One thing I have noticed if I can ask an additional question, would it be better for me to find a decent theme and install that versus trying to modify the default?

For SEO reasons i wouldn't keep the re-directed link in your footer. It is bad practise.

The RWD theme is clean, easy to modify and offers features that are only available as paid extensions in other themes (such as colour swatches and product zoom.)

Thanks for the help on this one, I believe that we have this one resolved.... it was related to the time zone setting on the server itself.
