Order Flow for Magento2

How does the order flow sequence go for magento2?

I seem some of my orders are in pending and some are in processing and im wondering what is the trigger that makes it go from pending to processing?

I have a weird internal use for magento so would like to keep them as pending as much as possible.

Please follow the below to resolve this

The sales orders initially have a status of 'Pending' and the status of the order changes from 'Pending' to 'Processing' when payment is received.
