Restrict Shipping Method Per Product / Category

I'm looking for a way to remove the shipping method for particular products. The client sells paint brushes, some of which are made of Sable hair. FedEx will not carry Sable goods.

How can I stop someone checking out with FedEx shipping if they have a product made of Sable in their basket?

You can, for instance, restrict shipping methods based on a product attribute, which sounds like a good solution for the problem you described.
