How to set the same product with different options per category

Hi guys, advise needed

I want to offer one the same product but with different dropdown options for every category. The problem is when it hits the cart, the base SKU will be the same and the option SKUs will be appended to it. What I want to avoid is duplicating the product for every product because that makes me use a new SKU.

Any idea how to get it resolved?
